If we had gotten a 40 percent reduction, people with high cholesterol could eat some s.” Egg yolk is very high in cholesterol, which is thought to be acontributing factor to heart attacks and strokes. McNaughton, an animal nut ritionist with the U.S. Depart ment of Agriculture, said re searchers found the reduction in cholesterol while working on another project. Researchers were trying to determine whether sunflower meal could be used in place of some soybean meal in the diets of commercial laying hens, McNaughton said. “Wejust decided to check the cholesterol level and found it lower in higher fiber diets,” he said. “Then we got into checking other fiber sources. We checked the cholesterol on the ongoing project and found we could low er the amount. Then we started working with other tests to de termine how much.” Researchers found by feeding dietary fibers, egg yolk choles terol could be reduced by about 8.8 percent. But it decreased ab out 15 percent when crude diet ary fiber was fed to hens as corn- rated to a corn-soybean meal iase diet containing crude fiber. “Egg yolk cholestrol was signi ficantly decreased by feeding alfalfa meal, oats, sunflower meal, rice mill feed, or wood shavings to laying hens when compared to yolk cholesterol of hens fed the base diet,” said re searchers. McNaughton indicated re searchers are not positive why fiber reduces cholesterol. Hesaid itis possible to reduce ; cholesterol by the use of drugs. “But drugs are found in the TAMJ.
