Stabel, instructor of animal science at Tarleton State University, has begun research to see if peanut flour can be used as an extender, binder or protein sup plement in sausage. Stabel and other scientists are also looking for new markets and other uses for the peanut. With the relatively new ability to remove the aflatoxin mold which could pre viously make a crop unusable, and through new processing methods, a whole new variety of uses for the peanut has emerged. “Were now working with basi cally two products, an all-oil meal and a flour extract with the oil re moved,” Stabel said. “This flour is not being processed much yet, but if it is found in our research to be suc cessful, plants could be built to re move the oil from the peanut and produce the flour. “This flour contains a protein con tent as high as 60 to 70 per cent,” he said. “The sausage industry, includ ing the production of weiners, bologna and other processed meats, could use the flour to possibly re duce the price of the produce the price of the product or make a prod uct that is higher in protein for a comparable price. “This would not only benefit the meat industry, but it would also be a boon to the peanut industry,” Stabel said. “There is also a good possibil ity the peanut flour can be used like soybean or wheat flour. “During the Christmas holidays we will be running some of the cook ing tests on the sausage containing 2V2, 5, IVz, and 10 per cent levels of the peanut flour, ” he said. “We run checks for evaporation, moisture and fat losses during cooking. “I believe that the addition of the peanut flour could increase and im prove the flavor of the pork saus age,” Stabel said. “It should be more aromatic, have better flavor and taste and have an increased water and fat holding capacity. This ability to hold more water and fat would help offset the cost of the pro tein additive. “There has been no extensive work done in peanut flour research, so we will also be doing shelf-life studies and will conduct a taste panel to help determine consumer acceptibility, ” he said. Marin County Probate Commis sioner Neel Martin approved Miss Olive’s petition Monday asking that a recent acquaintance, Carolyn Shaalman, a 21-year-old volunteer worker at Marin Juvenile Hall, be appointed guardian of her inherited estate. Part of the agreement was that Hallinan would get half of the estimated $50,000 estate for legal services. If Miss Olive is convicted of mur der in her juvenile court trial, she forfeits all rights to her parents’ es tate as sole heir, and the attorney would not be paid. A trial date was to be set at a Dec. 16 hearing. Hallinan, who briefly represented newspaper heiress Patricia Hearst, said in an interview he is optimistic about chances of winning acquittal for Miss Olive. “I didn’t go into this for the exer cise,” he said. “I ve talked to her, I interviewed witnesses and I think this is a pretty fair arrangement.” Miss Olive and her 20-year-old boyfriend, Charles Riley, are charged with first-degree murder in the bludgeoning slaying of her mother, Naomi, 53, and the fatal shooting of her father, James, 58, last June 21.
