Very often, the fruit is served alone, without any season ings. In European countries, you would find dairy products used quite extensively, particularly cottage cheese and sour cream. In most countries, heavy or whipping cream is used in the dessert preparation, as is done in the Banana Fool, a favorite recipe from Africa. BANANA FOOL 2 c. banana pulp 4 egg yolks, beaten 2 tbsp. maraschino cherry juice Vz c. heavy cream whipped 2 egg whites, beaten 2 tbsp. powdered sugar % tsp. grated nutmeg Whip the banan pulp until smooth. Beat egg yolks until thick, add banana pulp and maraschino juice and beat well. Pour into sherbet glasses and chill. Before 'serving, whip cream and add some to each glass. Whip the egg whites with sugar and add some of this to each glass on top of the cream. Sprinkle a little nut meg over the top. Serves 6. “Make United Nations Day an occasion at your home.
