March meeting of the Veterimary Faculty Ladies was held at the home of Mrs. Pat Hubert, with the Mesdames J. N. Beasley, C. M. Patterson and G. S. Trevino as co-hostesses. During the social hour coffee and rolls were served from a table centered with an arrangement of spring flowers. Mrs. John Mil- liff presided at the coffee service. DE PINERO White sauce is one of the most basic and versatile recipes; yet it is also one that requires much care to prepare. It can be come lumpy very easily and there by ruin the tastiest dish. To conquer the preparation of white sauce is to become a pretty good cook, and the only way to do this is the hard way; there are no shortcuts. There are, though, certain pre cautions to be taken into consider ation, which will help to achieve a lump-free sauce: • The milk should be added very slowly at the beginning. • The sauce should be cooked over a low fire all the time. • The sides of the pan should never be scraped. Once the sauce becomes lumpy there is nothing you can do un less you are ready to start all over again. In case of emergency you may try straining it, but this is not a very successful procedure. The basic white sauce recipe is: 1 tablespoon fat, 1 tablespoon flour, 1 cup milk and % teaspoon salt; or 2 tablespoons fat, 2 table spoons flour, 1 cup milk and % Need A Billfold, Belt, or Buckle? There are several ways to com bine these ingredients. The one I have found most successful is melting the fat in the pan, adding the flour gradually while stirring to mix, and then adding the milk, again very gradually. If butter or oleo is used for the fat, it may be wise to remove the pan from the heat once the butter or oleo is melted since these fats bum very easily. After the milk is added, the sauce can be returned to the fire and allowed to thicken. There is no need to stir any more than occasionally while the sauce is thickening. This basic recipe can be varied an infinite number of ways. For cheese sauce add the grated cheese and 1 teaspoon dry mustard; for creamed vegetables, fish, and meats (“a la king” dishes), also for meat pie filling, add grated or minced onion, a little parsley and pepper; for cream soups, com bine equal parts of the sauce and the strained vegetable. For cream gravy use the drippings for fat and add the solid drippings to the finished sauce. There are many other dishes for which white sauce is the basis and many others you can invent, when time permits. It lends itself to experimentation, and as a proving ground for your more ex otic spices and herbs, it is un equalled.
