CHICKEN TETRAZZIE The Battalion College Station'(Brazos County), Texas Thursday, February 7, 1957 PAGE 5 Social Whirl 3 tablespoons flour 2 cups chicken broth 1 cup heavy cream 3 tablespoons butter Parmesan cheese 1 4-pound chicken 1 teaspoon salt 14 pound fresh mushrooms, sliced* 2 tablespoons sherry (optional) !4 pound spaghetti 3 tablespoons butter * Canned mushrooms may be used. Cover chicken with hot water; add salt and simmer until tender. Cool in broth, then shred chicken, putting skin and bones back in broth. Cook broth down to a little more than 2 cups, so that when it is strained you will have 2 cups for the sauce. Saute mushrooms in 3 tablespoons butter for 2 or 3 minutes. Cook spaghetti in boiling salted water. Make sauce by blending the additional 3 tablespoons of butter with flour, adding broth and Stirling over low heat until smooth and thickened. Add cream and sherry. Divide sauce; add chicken to one part, and spaghetti and mush rooms to the other. Put Spaghetti into baking dish, making well in center for chicken mixture. Coyer casserole with grated Parmesan cheese. Bake at 375 degrees until lightly browned, and serve at once. Serves eight. SPANISH BEEF SAUCE This sauce may be served over buns or corn bread. Vz cup hot water 1 teaspoon salt 3 tablespoons vinegar 1 teaspoon dry mustard 2 pounds ground beef 1 cup chopped onion y A cup chopped green pepper 2 cans tomato sauce y /z cup chili sauce Brown meat in a little hot fat in a large skillet. Add onion arid green pepper and cook for about 5 minutes. Stir in remaining ingredients and simmer 20 to 25 minutes. FRUIT ICE 4 cups water Juice of 3 oranges 2% cups sugar Juice of 3 lemons 3 bananas, mashed % teaspoon salt Boil water and sugar, to which salt has been added, to a syrup. Cool and add bananas and fruit juice. Freeze in 2-quart freezer or refrigerator trays. Beat with electric mixer after it has set well, and then freeze again. Campus Study Club Enjoys Foreign Travel Program Aggie Wives Council will meet at 8 p.m. Monday in the YMCA. New officers for the spring sem ester are Doris Purser, president, from the Agricultural Education Wives Club; Nancy McMordie, vice president, Agricultural Eco nomics; Betty Ann Davis, secre tary, Agronomy; Mary Lyles, treasurer, Agronomy, and Annie Watson, reporter, Agricultural En gineering. * * * At their meeting Monday night Geology Wives elected officers for the year: Joy Brown, president; Shirley Waggoner, vice president; Ann Long, secretary; Mae Beth Wilson, treasurer; Amy Phillips, representative to the Aggie Wives Council; Amy Sue Gilby, member ship chairman. The new and outgoing officers will be entertained at a coffee Tuesday evening at 8 at the home of the club sponsor, Mrs. Peter Dehlinger. A discussion on the responsibilities and duties of the new officers is planned. * * * Business Administration Wives and their husbands will gather for a steak fry at 6 p.m. Friday, Feb. 15, at the Cushion Cabin in Hen- sel Park. Fish will also be served. Cost of the meal will be $1 per person. Tickets may be obtained from any club member or by call ing Bonnie Tabor, TA 2-4795, by 8:30 p.m. Wednesday, Feb. 13. ❖ * * Dames Club will hold its reg ular • meeting at 8 p.m. Tuesday in the YMCA. A new president will be elected. After the busi ness meeting, a lecture on “Use of Herbs and Wines in Cooking” will be given by the Extension Service. Refreshments will be served b,y the hostesses for the evening, Rilene Hefner and Beth Van Cleave. * * * A Valentine tea honoring fac ulty of the Chemical Engineering Department wil be given by the Chemical Engineering Wives Club at 7:30 p.m. Monday in the south solarium of the YMCA. * # -K Architecture Wives Club will meet at 7:30 p.m. Wednesday in the south solarium of the YMCA. A business meeting will be held first after which Charles A. Law rence of Caudill, Rowlett and Scott will speak on “Planning your Home.” WSCS Program Features Slides Capt. Floyd M. Stephens pre sented a program of beautiful and interesting slides taken on his travels through the lands of the Bible at the Monday night meet ing of the Woman’s Society of Christian Service of the A&M Methodist Church. Mrs. Ran Boswell was hostess to the group. Capt. Stephens was introduced by the program chair man for the evening, Mrs. J. R. Lyons. After the business meeting, chaired by the president, Mrs. W. Z. Varvel, the hostess and the Mesdames W. C. Dahlkemper, W. W. Mills and J. R. Oden served refreshments. Members of the Campus Study Club enjoyed a talk on foreign travel by Mrs. Guy Adriance at their meeting Tuesday afternoon at the YMCA. Mrs. Adriance, who has made six tours of Europe, showed nu merous color slides of points of interest in Ireland, Scotland, Eng land, Norway, Sweden, Denmark, Belgium, France, Switzerland, It aly, Germany, Holland and Sicily. Preceding the program, the president, Mrs. Bardin H. Nelson, conducted the business meeting, which was opened with the read ing of the Collect by Mrs. A. D. Folweiler. The treasurer’s report was read by Mrs. D. A. Anderson, and the following committee chairmen gave reports: Mrs. Carl Landiss, education; Mrs. W. S. Allen, fed eration; and Mrs. D. M. iBass, yearbook. Mrs. R. O. Berry Was made a life member of the club. Mrs. Nelson appointed a nom inating committee of Mrs. John Ashton, chairman, Mrs. C. W. Crawford and Mrs. F. L. Fisher.
