SANTA CLARA SALAD 12 prunes in syrup 4 slices pineapple 3 07.. cream cheese % head lettuce Stone prunes. Soften cream cheese with evaporated milk, if necessary, and stuff prunes. Place pineapple on lettuce and arrange three stuffed prunes on each slice. Garnish prunes with bits of cher ries if desired. BAKED CORN AND TOMATOES 2 cups cooked corn 1 t. sugar 2 clps tomatoes 1 cup fresh bread crumbs 1 t. salt 3 T. fat pepper Mix seasonings with the corn and tomatoes and pour all into a greased baking dish. Spread the crumbs over the top, dot them with the fat, and bake in a moderate oven (350 -400 degrees) for one-half hour. This is a satisfactory way of utilizing left-over corn or tomatoes. SALMON AND RICE LOAF 2 eggs, well beaten salt and pepner 1 cup salmon 1% cups milk 1 cup cooked rice 1 small onion, chopped !4 cup grated cheese % cup cracker crumbs Combine ingredients; mix thoroughly. Pour into well oiled pan. Bake in moderate oven (375 degrees) until brown. Serve hot. • ENGLISH PEA SALAD 1 can green peas 1 hard boiled egg 1 small onion gi'een pepper J tomato mayonnaise pickles Mix all ingredients thoroughly and serve on lettuce leaves.
