"The original owners would iok sometimes, and sometimes ey wouldn’t,” Archer said. “If meone came by and the owners eren’t in the mood to cook, you ere out of luck.” As time and owners went by, the er house became a steak house, hen Archer took over there was a in business due to the oil bust. “I followed the previous owners’ methods, until I could establish my own/’ he said. Archer, who handles cooking du ties, had no prior experience as a chef or restaurateur. “I paid attention to methods used at other restaurants, picking up ideas that appealed to me,” Archer said. Guests at the Country Inn Steak House can order anything from a 2- 1b. T-bone to filet mignon. If it is red meat, it is in Somerville. One of the strengths of a good steak house is the ability to cook meat properly. “We try to undercook the meat a little bit, just in case they want to take it back,” Archer said. “It doesn’t happen often though.” Archer said to insure the quality of the meat, Country Inn employees cut the meat themselves, and never freeze it. The chicken fried steak at Country Inn has an equally grand reputation. Cody Lemons, a senior nuclear engineering major, said the meat is so tender it melts in his mouth. Archer said the round meat is one reason the meat is tender. “Unlike a lot of places, we try to use only inside round steak, as op posed to both the inside and out side round steak,” Archer said. Lemons gave the Country Inn his seal of approval. “1 consider myself a chicken fried steak connoisseur, and I give this four out of five stars,” he said. Seafood is also available at the inn. Archer said the secret behind the success of his seafood is the bat ter, which comes from his brother’s recipe. Banana split pie is one of the many desserts offered. The pie is es sentially a banana split in a graham cracker crust. Smith said service is one of the best features of the steak house. “It can get pretty hectic around here,” she said. “But the customers are so laid back—it’s great. Many of the customers are regulars so you develop friends.” Archer has one goal for its cus tomers. “When people leave the restau rant, I don’t want them to be hun gry,” he said. “Of course, I want them hungry when they come in.” A&M is a “meat and potatoes” kind of school, and the Country Inn Steak House in Somerville is a “meat and potatoes” kind of place, Archer said. Students are invited to satisfy their meat and potatoes cravings by visiting the steak house at Texas 36 south with a date or friends.
