Restructured beef meeting demands By Kimberly Green Reporter The number one factor affecting the average American’s diet is taste, and restructured beef has won the “taste test.” Restructured beef, commonly found in various institutions, hospi tals and fast-food restaurants such as McDonald’s and Arby’s, is a nutri tious, low-fat and convenient source of protein that meets consumer needs. Further processed meat products, known as “restructured meats,” are formed from whole muscle sections, meat trimmings and Finely chopped tissues not readily available to con sumers. Restructured beef has the distinct advantage of allowing the producer to control the content of the prod uct, said Dr. James Keeton, associate professor of Animal Science at Texas A&M. Initial research on the product was done because of a supposed shortage of beef and an interest in extending soy protein. Today, pro duction is driven by economic fac tors, Keeton said. Potential problem areas exist in the product’s image due to previous frozen products of poor quality and a discoloration possibly due to oxy gen tension. Despite the problems, restruc tured beef has the same nutritional value of normal cuts. As a result, re structured beef can be incorporated into almost any diet. The restructuring process begins with lean cuts of meat (fat cuts don’t bond as well) and a particle size re duction by grinding, flaking or slic ing. A small percentage of salt, so- diumtripolyphosphate and water is combined with the meat’s natural proteins to bond the meat particles. The mixture is shaped by a mold or casing to form snack sticks, jerky, sheets, patties, steak fingers or slabs. The Final product is either frozen and distributed, or partially pre cooked and packaged for retail. Letter: 5 men will die; FBI looking for author LUFKIN (AP) — FBI agents Tues day were looking for a person identi fied only as “The Peacemaker” who said five men will die unless the U.S. Forest Service removes its “armed camp” of Rainbow Family watchers. The threat came in an anonymous letter sent to law enforcers Jim Mor- phew and Billy Ball of the Forest Service’s Lufkin ofFice, and said the Five men would die by the end of June. Ball has been assigned to previous Rainbow Family gatherings nation wide, including one last year in North Carolina, officials said. Calling the ofFicers “brothers” and assuring them of “The Peace maker’s” brotherly love, the letter nevertheless said: “These people, whatever their lifestyle, should be free to camp in public forests with out the fear of looking down the bar rel of a gun. Are we in Russia? “You are going to bring about death in our beautiful forest, and I ask you to prevent this by pulling out your men,” the letter added. “It you do not, mark my words, five men will die by the end of this month. “Now I leave you with these words. You are the keeper of your brother; you are not his jailer. If you seek to jail him, he will rise up against you and blood will spill.” FBI Special Agent Rower Dunfee, of the bureau’s Tyler office, said the agency is investigating the the letter, but has no suspects. “I really can’t say much because the investigation is pending,” Dun- fee said. The Rainbow Family, a loosely or ganized group of back-to-nature ad vocates, have met in annual “gather ings of tribes” of thousands of people since the early 1970s and proposed to gather this year in Texas. The Forest Service has sought to prevent the group from camping in East Texas forest land for this year’s celebration. The agency has also esti mated that 400 members of the Rainbow Family were in East Texas forests on Monday and said that could triple by the end of the week. U.S. District Judge William Wayne Justice ruled earlier this month that the Forest Service’s pol icy on issuing permits for gatherings was unconstitutional. The ruling has been appealed by the Forest Service. Meanwhile, both sides are await ing word from the 5th U.S. Circuit Court of Appeals on whether a per manent injunction against the gath erings will be granted. Police Beat The following incidents were reported to the University Police Department from June 15 through Tuesday: BURGLARY OF A MOTOR VE HICLE: • Someone broke into four ve hicles Monday night at the Intra mural Service Center parking lot. Two wallets and a purse were re ported stolen. • In seperate incidents, a purse and wallet were reported stolen from two other vehicles on campus. BURGLARY OF A BUILDING: • After seeing someone drive a car to the loading dock of the Medical Sciences Building, an of ficer found a chair belonging to the University inside the car’s trunk. • Someone stole a Macintosh computer and its peripherals from the Biological Sciences Building East. FELONY THEFT: • A student reported that someone stole his unattended Toyota while it was in the MSC Circle with the keys in the igni tion. Sheriffs deputies later re covered the vehicle after arrest ing the driver for driving while intoxicated. • A man reported that some one stole his van while it was C arked on campus. The van was iter found undamaged in Hous ton. MISDEMEANOR THEFT: • Seven bicycles were stolen from various locations around campus. • A woman reported that someone stole $25 from her purse, which was left unattended in the Reed McDonald Building. • A woman reported that someone stole $5 from her purse, which was left unattended in the Soil and Crop Sciences Building. • A woman reported that after giving a man a ride, he stole seve ral items from her vehicle while he was getting out. DISORDERLY CONDUCT: A student reported that while leaving the Dixie Chicken, she was harassed by two men, who then chased her to her car. SEXUAL ASSAULT: A woman reported that she was sexually assaulted in a park ing lot on campus. ASSAULT: • A student reported that he was assaulted while playing bas ketball in the Read Building.
