"Don't worry, just hold your nose and swallow it whole." "They taste just like chicken." "It's a delicacy." "The butter and garlic sauce make the dish." I needed those words of en couragement. I had been per suaded to try escargot. (A fancy name for your common snail.) Trying this "delicacy" was a major feat for me — the same person who has nightmares about spiders that cause her to sleepwalk. I guess the psycholo gists would say I have an irratio nal, excessive, and persisitent fear of bugs. When I sit down and think about it, I can't figure out why I react the way I do. I'm approxi mately 5 feet 9 1/4 inches taller than any bug I have ever en countered, I've never found a roach at the bottom of my Coke and I have never been awakened at night with a bug on my face. So, what made me decide to put snails in my mouth? Well, my roommate happens to like escargot and talked me into trying it. She gave me the standard you'll-never-know-if-you-like-it- unless-you-try-it speech. (What a salesperson.) I was in a particularly adven turous mood that day and thought that maybe I would try one of the little slimes. (Actually I succumbed to peer pressure.) Beth and I journeyed to our neighborhood Safeway in quest of escargot. (Not an easy item to locate in a college town grocery store.) After asking two grocery shoppers, two sackers and one checker, we found the manager in the courtesy booth who, di rected us to aisle three. "The gourmet section," he sniffed. He seemed offended. The gourmet section was about three feet wide and five feet tall. We found a clear tubu lar container of snail shells with a can of snail meat at the bottom. (Right next to the canned fish and the pickled pigs feet — not exactly my favorite foods either.) We arrived home with the bag of goodies, and Beth began to prepare the snails. I didn't realize that you stuck them back into their shells to cook. It seems pointless that they pull them out, just so we have to put them back in to cook and then pull them back out just to eat them. I think I wouldn't mind it so much if the snails weren't in their shells. Something about seeing them in their natural hab itat only reminds me even more that I'm eating something that many people step on. I guess it's similar to picking out the lobster before you eat it or the waiter bringing your fish to your table and the fish is star ing back at you. The snails cooked for 10 short minutes. (Beth was starving; I could have waited another cou ple of years.) The butter and garlic was pun gent smelling, but not too bad. Beth placed my meal of snails before me. There they were, six glistening shells with brown bul bous half-moon shaped slugs floating in the butter and garlic sauce. I had to do it. I had to eat just one. My heart began to palpitate, my eyes began to water and my hands began to sweat as I at tempted to remove the meat from the shell. After a bit of a struggle (I don't think the snail wanted me to eat him either), I spiked the little critter with my fork. I put it in my mouth and choked it down. I did it. I tasted nothing but the sauce. Beth cried foul play, and in sisted that I really eat them. Feeling like an eight-year-old whose mother had told her to clean her plate, I tried it again. Only this time I chewed once. Contrary to popular belief snails do not taste like chicken. It wasn't even close. In fact, they don't taste like anything at all. The meat was very tender. It wasn't as bad as I had thought, but I think I could have eaten a gummy eraser that had been soaked in garlic and butter sauce and have like it as well.
