Pomerat for members of the A&M Women’s Social Club when they meet at 3 p.m. Friday in the ball- I’oom of the Memorial Student Center. Dr. Pomerat, professor of cell ular physiology, University of Texas Medical Branch, Galveston, filmed the life and customs of Japan during a recent visit to the Far East. DE PINERO Every once in a while we like to prepare a dish that is a little more fancy, a little more exotic than usual, but which will not break the month’s budget. “Arroz con polio,” which is Spanish for chicken and rice, is a very cheap, easy-to-prepare dish; yet it will lend that extra special touch to a dinner party. It can be easily prepared in large quan tities, and it also goes a long way. It is, besides, a meal in itself, and requires only a cold salad for ac companiment. You will need a 2-pound chicken which should be cooked until al most tender in salted water to which an onion has been added for flavoring. Speakers for the evening were Mrs. Alice Reynolds Pi’att, assis tant director of the Institute of In ternational Education, and Mrs. Rex Baker, chairman of its com munity committee in Houston. They were introduced by Bennie Zinn, director of student affairs at A&M. The institute was organized after World War I to develop scholar ship opportunities for foreign stu dents, and in 1952, regional offices were established in Houston. Kay King of Beverley Braley’s will speak on “Budget Wardrobes.” reserved, and the chicken can be either left in pieces or it can be boned and sliced. Then proceed in this manner: heat 3 tablespoons oil (preferably olive oil) in a deep skillet; when hot add 1 medium onion, minced; 1 ounce salt pork, diced; 1 small bell pepper, diced; 1 bay leaf, 6 olives, 1 teaspoon capers (option al). Saute these ingredients in the oil (over low fire) until the onion is transparent. Add the chicken and cook until golden; then add 3 more tablespoons oil and (4 cup tomato sauce. Stir to mix, Add 2 cups rice and mix with the in gredients in the skillet. In a separate container heat 4 cups of the reserved stock and add to the pan. Cover and allow to cook over low heat. If the rice should cook dry, add a little more of the stock. Cook for 25 min utes or until rice is tender. When ready, turn carefully onto a large platter and sprinkle with grated parmesan cheese on the top. Garnish with whole canned red peppers and warm green peas. Yields 5 servings. This dish also goes very well with string beans and deviled eggs. I did not whistle at her.
