Expert Talks On Meat Quality
Dr. F. E. Deatherage, head of
the Department of Agricultural
Biochemistry, Ohio State Univer
sity, will talk on “The Nature of
Quality in Meat” at 8 p.m., Friday,
Oct. 31 in the lecture room of the
Biological Science Building.
The authority on food research
will discuss the biochemical and
physiological nature of tenderness,
juiciness, flavor, color and texture
along with implications to the live-

A native of Illinois, Deatherage
graduated from Illinois College in
1935 with a degree in chemistry,
and received his Ph.D. in biochem
istry from the University of Iowa
in 1938. He has written many
books in the field, and in recent
years has been interested in the
use of anti-biotics in foods.
Faculty members, graduate stu
dents and the public have been in
vited to the meat lecture.

conference on Upper Air of the
American Meteorological Society

sion meetings to be held in Mobile,
