College Station (Brazos County), Texas PAGE 6 1 Thursday, May 31, 195G ^^ciuoriteS by Barbara Paig-e Battalion Woman’s Editor SPAGHETTI AND MEATBALLS 1 T butter or margarine 2 T catsup 1 can tomatoes 1 T sugar 1 can tomato paste 1 small can mushrooms 1 large onion (if preferred) Vz t. salt 1 lb. ground meat 1 egg 1 small ofiion 2 slices bread Put butter in saucepan to melt. Cut onion up in small pieces to cook until transparent. Sieve tomatoes (or mash) and cook with the onions. Put in tomato paste, rinsing with one can of water. Add sugar and cook about 1 hour or more, until medium thick. Meanwhile, put hamburger meat in a bowl, squeeze bread with water, and add to the meat, also grated small onion, salt, egg, sugar, mushrooms and catsup. Mix thoroughly and shape into meatballs, cooking in frying pan until brown. Then add to the tomato mixture and cook for 20 minutes to bring out flavor. Prepare spaghetti according to particular brand recipe and serve with parmesan cheese and sauce with meatballs. STRAWBERRY ICE CREAM PARFAIT PIE 1 pkg. strawberry- flavored 1 cup strawberries gelatine whipped cream 1 cup hot water 1 pint vanilla ice cream Dissolve gelatine in 1 cup hot water. (For peach pie, dissolve lemon- flavored gelatine in hot syrup from canned peaches.) Add Vz cup cold water, stir. Add ice cream cut in 6 chunks. Stir til melted. Chill mixture in refrigerator until it begins to thicken and mound when spooned (10 to SO minutes ) (Allow about .35 to 40 minutes for peach filling.) Gently fold in fruit and flavoring. Add sliced, fresh or frozen straw berries. (Add 1 No. 2 can (2% cups) sliced peaches, drained and Vs t. almond extract for the peach pie). Pour into cooled, baked 9-inch pastry shell. Chill til firm, about 20 to .35 minutes. Trim with whipped cream and fruit or nuts. For pie in a flash: Use only 1 cup water. Proceed as above. TWENTY-FOUR-HOUR-SALAD .3 egg yolks 1 T butter or margarine T sugar 1 cup heavy cream, whipped dash salt ^ 2 cups pitted cherries 2 T vinegar 2 cups quartered marshmallows 2 T pineapple syrup 2 cups pineapple bits 2 oranges, cut in pieces Cook egg yolks, sugar, salt, vinegar, pineapple syrup, and butter in double boiler til thick. Cool. Fold in whipped cream, cherries, marsh mallows, pineapple, and oranges. Chill 24 hours. Decorate top with orange sections and maraschino cherries, if desired.
