Campbell (Ed note: Mrs. Campbell is the wife of Tom Campbell who is majoring in chemical engineering and will graduate in June ’55. The Campbells are from San Antonio. The recipes Mrs. Campbell has prepared for Family Favorites are Southern Fried Chicken, Yeast Rolls, Tossed Salad, French Dressing, and Banana Cake. SOUTHERN FRIED CHICKEN Southern fried chicken is one of our favorites for Sunday dinnex 1 , after church. Have your butcher cut a young, tender fryer into serving-size pieces. Dip in batter of slightly beaten egg, mixed with two table spoons of cold water. Sprinkle with salt and pepper and coat with flour by shaking in a paper bag with about one cup of flour. For that extra thick crust, dip chicken a second time in batter and coat again with flour. Using deep fat, cover, cook half the time, then remove the cover for last half of cooking. I usually serve this main dish with whipped potatoes, green peas, buttered carrots, tossed salad, milk gravy, hot rolls and iced tea with lemon and fresh mint. YEAST ROLLS Here is an easy hot-roll recipe. 1 cup milk 2 tablespoons butter 1 tablespoon sugar 1 teaspoon salt Scald milk. Add butter, sugar, and salt and cool to lukewarm. Add yeast and l 1 /^ cup of flour. Beat thoroughly for five minutes or two minutes if you use an electric beater. Add enough flour to make the dough just barely firm enough to handle. Knead and let rise about one hour before shaping. Bake at 425 degrees for 12 to 20 minutes. TOSSED SALAD This old “standby” is always good and may be varied. Lettuce Cucumber Tomatoes Green onions Radishes Celery Cut lettuce into small leaves, cube tomatoes, slice radishes in button shapes* pare cucumber and dice, slice green onions and celery and mix. Pour this recipe of French Dressing generously over the Tossed Salad FRENCH DRESSING Vs cup olive or Wesson oil Vz teaspoon pepper 2 tablespoons vinegar % teaspoon dry mustard 1 teaspoon salt « Combine oil and vinegar. Mix salt, pepper and dry mustard and whip till there is no oil separation. The oil will separate after setting for any length of time. „ BANANA CAKE Here is a cake that is tops with Tom. 1 Vz cup sugar % teaspoon soda Vz cup shortening % teaspoon baking powder 2 eggs % teaspoon salt 2 cups flour y 2 cup milk 3 bananas 1 teaspoon vanilla Cream sugar and shortening. Add eggs and beat well. Sift dry ingredients, mash bananas and add to batter. Add flour and milk al ternately. Add vanilla. Bake at 350 degrees for 20 to 30 minutes. Filling for Cake Vz cup sugar Grated rind and juice of 2Vz tablespoons flour 1 orange I egg Lump of butter Cook until creamy and thick. Ice cake with seven-minute or other favorite icing.
