Zinn Jr. This week’s guest editor of Family Favorites is Mrs. Inge Nurnberg Zinn, daughter-in-law of Bennie Zinn, assistant dean of men. Mrs. Zinn was born in Harborn, Germany, and received most of her education in Kassel. She and her husband came to College Station in September of 1953 after being married in Berlin, July 1. They lived in Project House 10-D until recently when they moved to Lufkin. APPLE DUMPLINGS (Apfel im Schlafrock) 6 medium-size tart apples M teaspoon nutmeg 3 /i cup brown sugar % cup butter teaspoon salt 1 tablespoon lemon juice % teaspoon cinnamon Double recipe pie crust Pare and core apples. Combine sugar, salt, cinnamon, nutmeg, butter, and lemon juice and fill each apple with some of the mixture. Roll pastry about Va inch thick and cut into squares large enough to cover apples. Place apples in squares; then moisten points over apple. Press together with finger tips. Place in large greased baking dish and pour hot syrup (recipe below) around dumplings. Bake in moderate oven 40-50 minutes. SYRUP , V2 cup sugar 2 tablespoons butter V2 cup light syrup 1 cup water Combine ingredients and heat for five minutes. BREADED CUTLETS (Wiener Schnitzel) 4 cutlets 2 tablespoons flour or Salt cracker meal Paprika T 4 tablespoons drippings 2 eggs Beat cutlets until tender and rub with salt and paprika. Dip into flour, then into beaten egg. Tm-n in cracker meal or flour. Put in hot grease and brown on both sides. May be garnished with lemon slices, anchovies, capers, and parsley. POTATO PANCAKES (Kartoffelpfannkuchen) 3 cups grated raw potatoes 2 tablespoons flour 1 grated medium-size onion 1 teaspoon salt 1 egg Dash pepper Grate potatoes and onion very fine. Mix with flour, seasoning and egg; stir well. Drop tablespoonful of potato dough into hot fat and fry on both feides until golden brown. BEEF ROLLS (Rindfleisch-Rouladen) 1 round steak, Vs inch thick Bacon drippings cut into pieces 2x4 Boiling vegetable stock inches Flour y Thick slices carrots Salt and pepper Pieces of celery rib V2 cup red wine Small pieces bacon Place on each strip of steak one slice carrot, piece of celery rib •and small slice of bacon. Roll the steaks and fastem-with skewers (or toothpicks). Brown in bacon drippings and vegetable stock in water. Simmer closely covered for two hours. Remove rolls, thicken stock with flour and add red wine. Season with salt and pepper, pour gravy over steak rolls, and serve with mashed potatoes. VIENNA TORTE 6 egg yolks 6 egg whites 1 cup sugar % teaspoon cream of tartar % cup sifted flour ' 94 cup giated unsweetened 1 teaspoon baking powder chocolate \ 1 teaspoon salt 1 teaspoon vanilla Beat yolks, until thick and lemon colored. Beat in half of the sugar (% cup). Sift together the flour, baking powder and salt and stir into yolks. Beat egg whites and cream of tartar until stiff and then beat in gradually the remaining sugar. Gently fold in % cup grated unsweet ened chocolate and 1 teaspoon vanilla. Carefully fold in egg yolk mixture. Pour into two round 9 inch pans lined with greased paper. Bake at 350 degrees 25-30 minutes. Put layers together with sweetened whipped cream. Put cream river top and garnish with flakes of dark chocolate. Five Dorms Are Being Repaired During Summer Dorm 15 Downs 16 For Third Victory Dorm 15 shelled two Dorm 16 pitchers for eight hits and 12 runs for their third win in intramural softball last Tuesday. Dorm 15 started by scoring sev en runs in the second inning with the aid of five walks and the time ly hitting of Rector, Dedeker, and Erp. They sent two more runs across the plate in the fourth in ning and then added three more in the fifth. Badgett, manager of the physical plants, said yesterday that the exterior repair work on Hart hall was almost complete. Badgett said dorms Milner, Mitchell, Law, Leggett, and Puryear would have both the extexdor and interior re paired. He said that $75,000 had been appropriated for this job. Talco, of Houston, has the con tract to do the painting which calls for $34,550 and should be finished by Sept. 5, 1954. A day-room is being added to Mitchell hall between rooms 35 and 36. Lights are being'installed over the lavatory in all rooms of these dorms that did not have one before. Good Turnout Is Reported At Golf Instruction Class Joe Fagan, manager of the A&M golf course, announced that he is having a big turnout for his golf classes and he feels that the classes are a big success. There are three groups of classes—ladies’, men’s and teen ager’s. The ladies’ classes meet on Monday and Wednesday at five p.m., the men’s classes meet on Tuesdays at five p.m., and the teen age group meets on Tuesdays and Thursdays at nine a.m. Methodist Youth To Have Rec. Program The Wesley Foundation of the A&M Methodist church has sched uled a Work, Worship, and Play Night to begin at 6:30 p.m. Wed nesday. Bill Payne, summer president, says that all Methodist students, especially those planning to enter the ping pong tournament, are urged to come out. Payne says that old clothes are in order, and reminds students that there are usually as many girls as boys there.
