mouth. “Delicate,” “fruity” and
“nectar,” typically mean the
wine will be sweeter, Bonarrigo
said.
“Ultimately, it is important
that this not be snobbish,” she
said. “You should drink whatev
er you want, but understand
diere are better pairings.”
Bonarrigo said since wine
cleanses the palette, it prepares
the diner for the next bite of food
and it will taste better.
“Wine is what makes the meal
a dining experience,” Bonarrigo
said.
When cooking with wine,
Bonarrigo said, one should also
drink the wine they use in the
recipe and she has developed
recipes following the theory.
