DALLAS (AP) — The new
Colonel’s Kitchen restaurant
being tested by KFC is a little
more expensive. It’s got a
much funkier red-and-purple
neon chicken logo. And it of
fers more food variety, even —
gasp — turkey.
“We’ve been really providing
meals that people could eat at
home for 40 years. The real
challenge that I offered up to
the group was how can we take
KFC, which is a great brand,
and develop the equity that
we’ve built over the years and
develop an even more contempo
rary store of the future, and this
is what we came up with,” said
David Novak, who began work
ing on the idea when he became
KFC’s chief executive officer and
president on July 19.
Actually a remodeled KFC,
the new Colonel’s Kitchen has
more windows, an open deli-
style counter and an on-site
bakery. Colonel Sanders is de
picted in white relief near the
entrance wielding a rolling pin.
“We want it to have the feel
of a kitchen, the kitchen you’d
have at home,” Novak said.
The company is looking to
ward its next step, as many peo
ple steer away from fried foods
and competitors like fast-grow
ing Boston Chicken and Kenny
Rogers Roasters multiply.
While Novak affirmed the
company’s commitment to its
“fried heritage,” KFC added ro-
tisserie chicken to the menu in
1993 and wants to continue pro
viding more choices, he said.
“KFC is looking for ways to
do better,” said Emanuel
Goldman, an analyst for
PaineWebber in San Francis
co. “They used to be called
Kentucky Fried chicken, and
then the name was changed to
KFC because of the ‘f-word.’ I
think that the company would
like to broaden beyond the
fried image.”
The chain has no plans yet
to roll out the new restaurant,
but will consider various op
tions after seeing how well it
does, Novak said.
