Ultra high temperature milk may
be new to most consumers but, a
Texas A&M professor of food sci
ences says, the milk has been around
for twenty years.
Dr. Charles Dill says a combina
tion of high temperatures and sterile
E ackaging increases the shelf life of
!HT milk from a couple of weeks to
about four months.
He says the UHT pasteurization
process was developed in the United
States about 20 years ago, but it has
been in the last three to four years
that the dairy industry has begun to
use the process commercially.
Unlike ordinary milk pasteuriza
tion, Dill says, UHT milk is heated to
280 degrees Fahrenheit, quickly
cooled to room temperature and
then packaged in an air-tight, five-
layer paper and foil container.
Dr. Alice Hunt, a nutrition spe
cialist for the Texas A&M Agricultu
ral Extension Service, says neither
the flavor nor the nutritional value
of the UHT milk has changed.
But, Hunt says, what has changed
is the convenience.
“People with busy lifestyles, and
those who use small quantities of
milk will find UHT milk a conve
nience,” she says.
