Every Friday, the Memorial Stu
dent Center serves a special creole
gumbo which recently won a first
prize appetizer award in Pennsyl-
vannia.
Jay Maynard, Assistant Director
for Auxiliary Dining Services at
Texas A&M University, is the
creator of this “Cajun Creole
Gumbo” recipe.
The National Frozen Food As
sociation sponsored the Second An
nual Contest for the Creative Use of
Frozen Foods. Restaurant opera
tors, dietitians, cooks, managers
and even certified executive chefs
competed in NFFA’s industry-wide
contest.
Maynard said several years ago he
spent some time as Food Service
Director at Louisiana College in
Alexander, La., where he was in
troduced to Creole cooking, which
is “the black version of French-
Canadian Cuisine — spicy and full-
bodied.”
Maynard's “Cajun Creole
Gumbo” recipe consists of shrimp,
(floured and sauteed), chicken,
diced ham, cut okra, celery, onions,
parsley and julienne bell peppers.
This mixture is stirred to perfection
in water and a tablespoon of gumbo
file powder, which thickens the
broth.
Maynard said this recipe adapts
nicely to an all-fish or all-chicken va
riety.
The MSC serves a variety of this
gumbo each Friday, using the
chicken, fish or shrimp recipe.
”1 often serve a fish gumbo which

cipe that backs you up nicely against
the food problem waste,” Maynard
said.
Maynard said that it is a costly
problem to have when you re feed
ing 30,000 meals a day. “I manage

The Symphonic Band’s fall semes
