te Indian expects
icond chili triumph
United Press International
)S ANGELES — Rufus Valdez,
11-blooded Ute Indian, is confi-
of winning the national chili
off again this year. His recipe
i back 2,()()() years,
riginally it was made with meat
orses or deer, chili peppers and
meal from the ears of stalks
grew only to the knee. No
aldez, a civilian engineer at
eland Air Force Base, won last
championship at Rosamond,
and will be back again on
23 for the 11th annual cookoff.
California event is recog-
ed as the national championship
ocal organizers and many of the
P® ticipants, who say it was moved
from Terlingua, Tex., because
local ground rules in Terlingua
somewhat provincial.
'aldez says he got his recipe from
grandmother when he was a boy
he Ute reservation near Ignacio,
She lived to the age of 102 and
atherl Jdezsays she credited her longev-
ich l)j: land that of her relatives to the
, wasi r ers chili.
Thirty-four cooks from all over
the United States, including Alaska
and Hawaii, are scheduled to com
pete again this year in Rosamond.
The competition last year drew a
crowd of 30,000 paying $3 admis
sion which goes to charity.
The contestants are furnished
only with a table and a Coleman gas
stove. They must bring their own
ingredients — none to be prepared
in advance — and various pots and
pans.
Each contestant makes three gal
lons of chili. The winning chili is
based on criteria of taste, consis
tency, color and aroma.
Judges this year will include
Robert Mitchum, Ernest Borgnine
and singer Kathryn Grayson, one of
whose hit songs was “I Cried For
You.
Valdez’ chili is made with ground
beef, ground pork, onion, celery,
green pepper, tomato, oregano,
cumin. New Mexico chili powder,
clove garlic, salt and corn meal.
He says his Mexican wife has
given him a tip on how to make the
chili just that extra bit hotter that
produces a champion.
