Students For Steak Tasting

Dr. W. A. Landmann, Meats
Chemistry Section of the Depart
ment of Animal Husbandry, said
Wednesday that he needs graduate
students to serve on a series of
steak tasting panels.
Landmann said students would
taste the meat prepared in the
Meats Chemistry laboratory.
“We are trying to determine the
quality and also to rate the meat
tested, so that we can tell if meat
from certain breeds of cattle is
more tender than meat from other
breeds of cattle,” he said.
He explanied that they will use
samples of steaks cooked under
standard cooking conditions. This
is done so that the cooking phase
of the test is uniform.
The steak samples are cut from
portions of the steak so that those
on the panel will be tasting por
tions from the same general area
of the steak.
“We will run chemical tests on
composition of the meat so that
we will be able to compare the
results of the panel to that of the
chemical tests,” Dr. Landmann said.
“We prefer graduate students
in Animal Husbandry but will ac
cept graduate students from any
field.”
He said that they would train
the students on the panel to judge
the things they are looking for in
the meats.
“We would like between six to 10
students for the panel,” he p
marked.
He said that if he gets ipof
than 10 that he would use mo:
than one panel so that they woe;
not have to come so often.
Any graduate student who i|
interested may contact Landmans
