Kae hails from San Antonio, while her husband, a sophomore in civil engineering at A&M, calls San Angelo “home.”) ORANGE CAKE 1 cup butter or shortening 4 cups flour 2 cups sugar 2 tablespoons grated orange peel 4 eggs 1 package dates l-y 3 cups buttermilk 1 cup pecans 1 teaspoon soda Cream butter or shortening and sugar. Add eggs, one at a time, then other ingredients as listed. Mix and bake ly* hours at 250 degrees. For the filling, mix 1 cup orange juice and 2 cups sugar and let stand until dissolved. Pour over cake, while hot, a little at a time, rubbing in until all is absorbed. GTTACAMOLE DIP 2 ripe avocados 2 dashes Tabasco sauce 1 teaspoon onion juice V-?. teaspoon Worcestershire 1 teaspoon lemon juice sauce Mash avocados with fork and add seasonings. Use as a dip. This may be used as a dressing. , EGGPLANT CASSEROLE 1 large eggplant 4 tablespoons butter 1 pound ground meat 1 cup cracker crumbs 2 tablespoons parsley salt 1 small onion paprika % cup milk grated cheese Peel and dice eggplant and cook until tender in boiling salted water. Saute onion in 1 tablespoon butter; add meat, salt and pepper to taste. Cook until browned well. Mash cooked eggplant and add parsley. Add eggplant mixture to meat. Melt 3 tablespoons butter and stir in crackers until butter is ab sorbed. Place layers of eggplant and meat and layers of cracker crumbs alternately in baking dish with layer of crumbs on top. Pour milk over these ingredients. Sprinkle paprika and cheese on top. Bake in 375- degree oven for half an hour. CREOLE FRANKS 3 tablespoons butter Vz cup chopped green pepper Vz cup chopped onions 1 minced clove garlic y> cup raw rice 1 No. 2 1 ,4 can tomatoes Brown pepper, onion, garlic 1 tablespoon sugar C franks 1 Vz teaspoon salt % teaspoon pepper 1 bay leaf 3 whole cloves in skillet. Add rice, tomatoes, sugar salt, pepper, bay leaf and cloves. Cover. Simmer 30 minutes. Top with franks. Cover’, and simmer an additional 5 minutes.
