To make four servings, use two iy 2 to 2 pound broiler-fryers, halved; soft butter or margarine; 1 teaspoon of salt, and % teaspoon of pepper. Place chicken in broiler pan— not on rack. Bring wing tips onto back to expose thick breast meat to heat. Brush generously with butter or margarine. Season halves with salt and pepper and leave skin side down. Adjust pan so that chicken is 7 to 9 inches from the source of heat, regulating the distance or heat so that chicken just begins to brown after 15 minutes. Broil slowly, turning after 30 minutes.
