(Both Dr. and Mrs. Robert B. Stewart come from Oklahoma. A
member of the plant physiology and pathology staff at A&M, Dr. Stew
art did his graduate work here in 1952*54’. The family then went to
Ethiopia for two years while Dr. Stewart taught there, returning here
in 1956. There are two little Stewarts—a boy, Leslie, 5, and Lisa
Ann, a young lady of I.)
FRESH APPLE PIE
4-5 apples
1 cup sugar
4 tablespoons water
Pare and slice apples.
Vz pound butter
1 cup brown sugar
1 cup flour
Fill a pie pan with them, and cover apples
with 1 cup white sugar and water. Then cream butter and brown
sugar, and slowly work in flour. Place on a piece of waxed paper
and roll or pat mixture to cover pie. Place over top of apples and
bake pie at 325 degrees for 45 minutes or until brown. Serve with
whipped cream.
PECAN MACAROONS
1 egg white 2% cups pecans, cut
% cup light brown sugar lengthwise
Beat egg white until stiff. Add sugar gradually. Work in the
nuts. Drop mixture fi-om a teaspoon onto, a greased and lightly
floured cookie sheet. Bake at 300 degrees for 15 minutes. Remove
from cookie sheet and cool. Makes 4 to 5 dozen.

Home from school for lunch, boys
and girls are likely to enjoy a
nutritious and heaity potato-and-
tuna chowdei’.
Grilled cheese sandwiches or
toast spread with an egg salad
mixture are good with the chowder.
We find fresh fruit and crisp
cookies a fine ending for this
menu.
POTATO TUNA CHOWDER
Ingredients: 1 can (HD/i ounces)
frozen condensed cream of potato
soup, 1 Vz to l % cups milk, % cup
very finely diced celery, 1 can
chunk style tuna (drained), finely
grated carrot (for garnish).
Method: Place the unopened can
of frozen soup in hot water for
several minutes so soup can be re
moved easily. Turn into a medium
sized saucepan and add the milk
and celery. Heat slowly, stirring
occasionally, until soup is thawed.
Bring to a boil, then turn heat
IVz cups vanilla wafer crumbs
1 envelope gelatin
% cup cold water
4 eggs, separated
Vz cup sugar
juice and grated rind of
1 lemon
3 tablespoons butter
Vz cup sugar
% pint whipping cream
Beat % cup sugar in egg yolks, lemon juice and rind, and butter.
Cook in double boiler until thick. Stir in gelatin, which has been
softened in the water, while the mixture is hot. Set aside to cool.
Beat egg whites and add Vz cup sugar; then fold in whipped cream.
Fold in cooled mixture and pour into a dish lined with 1 cup of crumbs;
sprinkle remaining crumbs over top. Chill for at least 3 hours. Serves
8.
