(The Hubert family moved to College Station from Riviera. Dr.
Hubert, a veterinarian, is a 1952 graduate of A&M and now teaches
m the School of Veterinary Medicine. There are three little Huberts
Patti, 4, Sari, 2, and Lori, 1. Following are some of Mrs. Hubert's
favorite “kitchen tested” recipes.)
BROWN PINTO BEANS
1 pound pinto beans i large onion
cup sugar ham bone, bacon, or bacon
salt and pepper to taste drippings
. Soak beans overnight. Add salt, onipn and ham bpne, bacon or
ippin^s tp l?eans an<l bring; to boil. Reduce heat and simmer for
2 hour?. Add sugar and salt and pepper to taste, and cook for an
other hour or until done. (Cooking time depends upon the weather
and consistency of the beans.)
OLD-FASHIONED CORN BREAD
1 cup corn meal 2 eggs
1 cup flour 1 teaspoon salt
1 cup sour milk 4 teaspoons baking powder
1 teaspoon soda % cup baked ham leavings,
(goes into milk) bacon drippings, or salad
% cup sugar oil
Preheat oven to 425 degrees; grease skillet or baking pan. Sift
together into bowl the flour, corn meal, baking powder, sugar and
salt. Beat eggs until Huffy and add milk to which baking soda has
been added.
Stir this mixture into the dry ingredients. Last add drippings
or salad oil, and stir until blended. Pour into skillet or pan, and bake
about 30 minutes, or until bread is brown and crusty on top.
UNCOOKED ICE CREAM
(for U/j-galloai freezer)
6 eggs dash salt
1 gallon milk 2 tablespoons vanilla
2 cups sugar
Beat eggs in a large bowl. Add sugar and 1 quart of milk. Add
salt and vanilla. When thoroughly blended, pour into ice cream con
tainer and add remainder of milk.
If a fruit or chocolate cream is desired, simply add the fruit
or syrup just before freezing, but be sure the fruit has been sweetened.
Because you may wish to add fruit or other flavoring and since the
cream swells as it freezes, only 1 gallon of milk is used in a l x /2-gallon
freezer. If sweeter cream is desired, add more sugar.
For chocolate cream, add 1 large can of Hershey’s chocolate
syrup; for peach, add fresh, sugared, sliced peaches; for banana nut,
add 4 mashed bananas and grated nuts; for strawberry, add fresh or
frozen sugared berries, etc.
TUNA FISH AND VEGETABLE CASSEROLE
A good Friday dish.
1 can mushroom soup salt and pepper 1
1 can tuna 1 medium onion
1 box frozen vegetables
2 tablespoons butter
Mix soup with water. After blending, add chopped onion, tuna,
frozen vegetables, salt and pepper, and butter. Pour into flat cake
pan which is well greased. Top with biscuits, made as follows:
Sift into a large bowl 2 cups sifted flour, % teaspoon salt, and
3 teaspoons baking powder. Add and cut into the mixture 4 table
spoons butter.
When mixed to the consistency of coarse meal, add % cup sour
milk, to which % teaspoon soda has been added. Mix and knead
gently. Roll out into flat round. Pour l 1 /^ cups grated cheese onto
dough, roll up and slice. This will make pinwheel-looking biscuits.
Place biscuits on top of tuna mixture and brush with salad oil.
Place in oven and bake at 4fl0 degrees until brown on top.

Embroidery Simple Matter

Time was when Grandma spent long hours straining her eyes
over fine hand embroidery for her dainty summer party dresses and
lingerie. Granddaughter, however, gets a better break, for the age
of automation has made delicate embroidery simply a matter of
threading up the sewing machine.
Consider, for instance, a ro
mantic, summer dance dress, made
of white silk organdy—full-skirted,
full-sleeved, with the important
touch of sophistication in a narrow
black velvet sash and di’amatic
black embroidery on the sleeves.
You can make such a dress,
which looks as if it came from
the salon of a custom couturier,
by using a standard pattern and
making use of the talents of your
sewing machine.
Local sewing center experts
made the original model using one
of the new slant-needle automatic
machines, but the embroidery also
can be done with the automatic
zigzagger attachment for an ord
inary electric sewing machine.
The dress has a skirt made of
two layers of silk organdy over
a matching petticoat. The fine-
line hem in the skirt is easy to do
with the flange hemmer attach
ment, designed especially for use
on sheer fabrics and producing
what looks like a hand-i'olled hem.
