By MRS. MALCOLM ENNIS
(The Ennises, a family of Texans, came to College Station two
years ago from Los Alamos, N. M., having been earlier at the Uni
versity of Texas in Austin. Dr. Ennis was with the Physics Depart
ment at A&M but left at the end of the spring semester to return
to Los Alamos where he will work on a high enei'gy X-ray device. His
family will join him there during the summer, and they will make
New Mexico their home. The Ennises have two girls and a boy—
five-year-old Cary; Mac, seven, and Martha, who is nine.)
CHICKEN
Cut fryer into pieces. Salt and dip in flour. Melt % stick mar
garine or butter in a pan that can be covered closely, and brown the
pieces of chicken. Add three chopped shallots (tops too) or equivalent
amount of onion.
Pour over the chicken one can frozen orange juice, undiluted.
Cover the pan closely, and bake chicken in a moderate oven until
tender.
GUMBO
A hot dish—a soup—that’s good even in hot weather. It’s quick
to prepare, a good way to use a handful of left-over ham oh chicken.
^Shrimp goes well too. Use a pressure cooker.
3 chicken bouillon cubes 1 or 2 cups okra pods, sliced
2 cups water or whole
1 large onion or more, sliced meat
1 can tomatoes or fresh ones, 2 or 3 dashes of Tabasco
when available
Dissolve bouillon cubes in water. Add onion, tomatoes, okra and
meat. (Meat is optional. If stock is used, the soup is good even without
meat.) Season with Tabasco.
Cover cooker and cap when ready. Bring pointer to proper level
and cook about 5 minutes.
CUCUMBERS AND ONIONS IN SOUR CREAM
This “concoction” can be used as a salad, over lettuce leaves or
chunks, as a relish, or with snack ccrackers as an appetizer. The flavor
is better if marinated 6-8 hours.

“True Liberty is conduct within
the framework of law and rules of
decency with the result that any
enjoyment of the beautiful free
doms this land delivers to us, re
sults in no pain and no injury to
any other humah being.
“This means that any free life
must be lived within, and be gov
erned by a code of honesty, of
fair dealing, and of respect for all
other human beings, including
those whose opinions differ utter
ly and completely from our own,
and whose views, political, relig

“If a single word has to be
resorted to to describe the good
man — the good citizen — and
the good father — it is the
word integrity.
“If it were in my power to be

single quality, I would not choose,
I think, wit or. wisdom, or even
that great boon, education. If I
could choose but one — I would
choose integrity.
“If one day my children and
grandchildren say to each other,—
‘He taught us to value integrity,’
I shall be content.
“How is the quality of integrity
passed on to the children in the
home ? It is passed on by living
a life of integrity, of sober hon
esty, of responsible citizenship.
“Mrs. Welch and I have two
children with a facility in the use
of words. Not so long ago one of
them spoke these sobering words
to me. He said, ‘When the two of
us were young, there were times
when you and Mom would obvious
ly set out to tell us how to live
the good life.

“With this ring I thee wed.**
Our marriage is beginning where a mar
riage should begin—in Church. Our hands
meet across the Bible. My eyes fall to the
printed page, and the verse I see there is so
appropriate that I catch my breath in awe
and amazement.
Here is the story of a king who long ago
sought for a virtuous woman and was told
that her price would be far above rubies.
Here are detailed the qualities that a truly
virtuous woman would have—faithfulness,
industry, thrift, compassion, courage,
strength, honor.
As I look up at my new husband, I feel a
surge of humility. I make a silent pledge
that these words in Proverbs will be my
guide as his wife. They’re a challenge, I
know. A big challenge! But, with the help
of the Church, I’m going to try to live up
to them.
THE CHURCH FOR ALL . . .
ALL FOR THE CHURCH
The Church is the greatest fac
tor on earth for the building of
character and good citizenship. It
is a storehouse of spiritual values.
Without a strong Church, neither
democracy nor civilization can
survive. There are four sound
reasons why every person should
attend services regularly and sup
port the Church. They are: (1)
For his own sake. (2) For his
children's sake. (3) For the sake
of his community and nation. (4)
For the sake of the Church itself,
which needs his moral and ma
terial support. Plan to go to
church regularly and read your
Bible daily.
