ICEBOX OATMEAL COOKIES % cup butter or oleo % cup shortening 1 cup white sugar 1 cup brown sugar 2 eggs 1 teaspoon vanilla 3 cups oats 2 cups sifted flour 1 teaspoon soda 1 teaspoon salt Vz cup coconut Vz cup nuts Cream butter, shortening and sugars. Add eggs and vanilla and mix well. Stir in oats. Add sifted dry ingredients—flour, soda and salt. Mix thoroughly. Add coconut and nuts. Form dough into rolls, wrap in waxed paper and chill in refrigerator. Slice and place on greased cookie sheet and bake at 375 degrees about 12 to 1 minutes. GRAHAM CRACKER CAKE 48 graham crackers 2 cups white sugar 1 teaspoon baking powder Vz cup soft butter or oleo % cup sweet milk €> eggs 1 cup raisins 1 cup pecans ^ pound coconut Crush graham crackers with rolling pin. Add baking powder and sugar to crackers and mix. Stir in butter. Add eggs and milk and mix well. Add raisins, coconut and pecans. Bake in angelfood cake pan in a moderate oven (350 degrees) for 1 hour. PEANUT BRITTLE cups white sugar cup white corn syrup j cup water cups raw shelled peanuts 1 heaping teaspoon butter 1 teaspoon vanilla 1 teaspoon soda Combine sugar, syrup and water and cook together until a drop forms a hard ball in cold watei'. Then add peanuts and butter and cook in the syrup until it browns. Add vanilla, remove mixture from heat and add the teaspoon of soda. Mix well and pour into buttered pans, spreading thinly about % inch. When cold, break into pieces. CREAM CHEESE-JELLO SALAD 1 package lime Jello 1 small size can fruit cocktail (1 cup) Vz of 3-ounce package of cream cheese (room temperature) Prepare Jello as directed on package using syrup from fruit locktail as part of the liquid. Chill until slightly thickened. Using rotary egg beater or electric mixer, whip in, blending well, the half package of cream cheese. Fold in the fruit cocktail. Pour into Jello mold and chill until firm. Unmold on serving plate. Garnish with lettuce and serve with salad dressing.
