Bunty and Jack Palmer reside at 802 A Inlow with their S’/a
year old son Bruce. Capt. Palmer is beginning his second year
with the Air Science Department here at the College. Listed be
low are some of their favorite recipes.
They say the lazy person is the most efficient person. In enter
taining at dinner, my husband and I must be about as efficient as a
host and hostess can be. We are strong believers in enjoying our own
parties as much, as possible, so we serve food that can be prepared
long before the day of the party and with little effort on our part
when the guets have arrived. Most of these recipes can be prepared
from one to two days ahead.
HAWAIIAN BOLA GAT
One 214-3 lb. fryer salt, pepper
flour 1 t. celery salt
Prebeat your oven to 350 degrees. Coat chicken with flour, salt,
pepper, celery salt, and brown in hot grease. Place in a lightly
greased casserole and pour over it this mixture of:
14 cup soy sauce 1 T. sugar
14 cup pineapple juice
Bake for one hour basting every fifteen minutes. Serve with
sauteed pineapple slices. Will serve 4 persons.
CHICKEN SPAGHETTI AND SAUCE
The sauce for chicken spaghetti can be made and frozen two
three weeks ahead.
1 large hen 2 small cans mushroom,
4 strips of chopped bacon chopped
1 T. minced onion 3 hard-boiled eggs
2 T. butter 1 pint can tomatoes, strained
2 small packages spaghetti
First boil the hen slowly until tender. Remove bones and skin
and cut into small pieces. Fry finely chopped bacon until crisp. Re
move from grease and put with chicken. Fry 1 T. minced onion
in remaining bacon grease until tender. Add 2 small cans mushroom,
chopped, and saute for a few minutes. To onions and mushroom add
3 hard-boiled eggs, chopped, 1 pint can of strained tomatoes, 2 T.
butter, chicken broth, and mushroom juice.
Add all ingredients to chicken, salt and pepper to taste, simmer
gently for 15 to 20 minutes. Then cook 2 small packages or one large
package spaghetti in salted water until tender and drain. Twenty
minutes before serving, pour chicken sauce over spaghetti. Do not stir
until just before serving, then mix lightly. Will serve 8 to 10.
BANANA BREAD
3 very ripe bananas pinch of salt
14 cup sugar 1 beaten egg
14 cup butter (melted) 1 T. water
1 t. soda 2 cups pastry flour, sifted
Mash with a fork the bananas and blend in sugar, salt and beaten
egg. Stir in melted butter. Dissolve 1 t. soda in 1 T. water and add
to a cup of sifted pastry flour. Mix and bake in ungreased loaf pan
45 minutes in 350 degree oven. Will make one loaf. Excellent as tea
sandwiches spread with butter, cream cheese softened with milk, or
serve plain.
WHISKEY BALLS
For mailing purposes or for the holidays I cannot think of a bet
ter cookie than Whiskey Balls. The longer they are allowed to mel
low the better they are.
2 jiggers (3 ozs.) whiskey 1 cup vanilla crushed or
2 t. Karo ground*
% cups powdered sugar 1 cup pecans, finely ground*
*An electric blender is excellent for grinding ingredients. Do not
overfill, however.
Mix thoroughly with hands vanilla wafers, Karo, whiskey, and
pecans. Form into ball the size of marbles. Roll in powdered sugar.
Let mellow.

A great favorite of all men I’ve fed is this hamburger casserole.

today.

Brown hamburger and onion. Boil small package of noodles. Put
into lightly greased casserole, browned hamburger and onion, cooked
