Jean Skinner and her husband came from Nebraska two years
a^o with their two children, John Jr. and Janice. Mrs. Skinner,
a member of the Mothers Club and the Newcomers club, has been
a Den Mother in Pack 383 at St. Joseph School. John Skinner, is
supervisor of the Poultry Farm. The Skinners live at 713 Inwood
Drive, Bryan.
TUNA CHOW MEIN
This is a quickie dish that my family really enjoys. We always
serve hot tea with this dish.
1 can tuna fish 1 can of chow mein noodles
1 can, vegetable chop suey 114 T. corn starch
Combine the tuna, chop suey and a thickening of the corn starch
and 3 tablespoons of cold water. Cook until slightly thickened and
clear. Serve on hot platter over hot chow mein noodles.
CHEESE NOODLES WITH HAMBURGER TOPPING
1 lb. hamburger 14 cup green onion
2—8 oz. cans, tomato sauce 14 cup green pepper
1—8 oz. pkg. noodles !4 cup melted butter
IVz cups cottage cheese
Brown hamburger in skillet, crumbling with fork. Add tomato
sauce; season to taste, mix well, and remove from heat. Cook noodles
according to directions on package; drain. Place half the noodles in
greased 2-quart casserole. Comljine cottage cheese, green onion, green
pepper and spread over noodles. Add remaining noodles and butter
and top with hamburger topping. Bake in 350 degree oven for about
30 minutes.
DATE COFFEE BARS
These cookies are my Cub groups favorites.
14 cup soft shortening 14 t. soda
1 cup brown sugar 14 t. salt
1 egg 14 t. cinnamon
14 cup hot coffee 1 cup dates
114 cups sifted flour 14 cup nuts
1 t. baking powder 1 cup confectioner’s - sugar
14 cup water 2 T. butter
Cream the shortening, brown sugar and egg. Stir in hot coffee
Sift together the flour, baking powder, soda, salt and cinnamon and
stir into creamed mixture. Blend in dates (which have been cut up
and simmered in the 14 cup of water until no liquid remains) and nuts.
Put in a greased and floured 13 x 9 inch oblong pan. Bake 350 de
grees for 15 to 20 minutes. Frost while warm with confectioner’s
sugar and butter plus enough milk -Of-^’reain to make a thin frosting
which will absorb into the bars,
snickerdoodles
1 cup soft shortening 1 t. soda
114 cups sugar 14 t. salt
2 eggs 2 T. sugar
2% cups sifted flour 2 t. cinnamon
2 t. cream of tartar
Mix shortening, 114 cups :-ugar, and eggs together thoroughly.
Sift flour, cream of tai’tar, soda and salt, together and stir in. Chill
dough. Roll into balls the size of small walnuts. Roll in mixture of
remaining sugar and cinnamon. Place about 2 inches apart on un
greased baking scheet. Bake until lightly brown in a 400 degree
oven for 8 to 10 minutes. Makes about 5 dozen.
COTTAGE CHEESE COOKIES
1 cup butter or oleo 2 cups sifted flour
1 cup cottage cheese preserves or jelly
Cream butter or oleo and cottage cheese thoroughly. Stir in sifted
flour. Press into roll about 2 1 /4 inches in diameter and chill in refrig
erator. When thoroughly chilled then slice into Vs inch slices and
place Vs. teaspoon of preserves between two slices and press the edges
together. Bake in 425 degree oven for 15 minutes or lightly browned.
