MELON COCKTAIL
2V 2 cups melon balls or cubes 2 T powdered sugar
(watermelon, cantaloupe, 2 T lemon juice
or honeydew) 1 T grape juice
Let the melon balls or cubes, sugar and lemon juice stand and
chill thoroughtly. Place in sherbet glasses and pour grape juice over
each serving.
HURRY CURRY
1—5-oz. pkg. pre-cooked rice 1 can condensed clam chowder
2 cans solid-pack tuna Vz cup milk
1 cup chopped apple 1 t. curry powder
Cook rice accoiding to directions on package. Drain tuna and
flake. Combine in saucepan the tuna, apple, clam chowder, milk and
curry powder. Simmer gently until the apple is tender. Serve over
hot rice. If desired, garnish with toasted cocoanut, chopped peanuts,
chopped egg whites, sieved egg yolk and chutney.
RINGSIDE ASPIC
2 envelopes unflavored gelatin
Vz cup cold water
1 can (12 oz.) tomato juice
1 cup canned peas
1 cup canned corn
% cup grated carrots
1 cup diced celery
2 t chopped onion
% t. salt
% cup mayonnaise
Soften 1 envelope of gelatin in % cup cold water. Heat vegetable
juice, pour on softened gelatin, stir until dissolved. Turn into individual
molds and chill until set. Soften remaining envelope of gelatin in %
cup cold water. Drain peas and corn. Add water to liquid to make
1% cups. Heat, then pour onto softened gelatin, stirring until dis
solved. Cool. Stir in vegetables, salt, and mayonnaise. Turn onto
firm tomato layer. Chill until firm. Unmold on salad greens, and gar
nish.
