Bring to a boil. Sprinkle rice cereal over mixture and continue to boil, stirring constantly, until mixture thickens—about 2 minutes. Remove from heat and stir in butter- Beat egg yolks until lemon colored. Stir a little of the applesauce into egg yolks and then, stirring constantly, pour back gradually into cooked mixture. Cool. Beat egg- whites until stiff and fold into rice mixture. Pour into lightly greased deep 1-quart baking dish. Bake slow (325 degrees) in oven 35 minutes. Makes 4 to 6 servings. CREAMY CHICKEN HASH I This dish can be baked to a bubbling brown while you set the table and make a salad. Hot crusty garlic bread is also a good accompani ment to the chicken casserole. % cup instant cream 2 cups diced cooked chicken 4 T flour grated Paxmesan or Romano 114 cups seasoned chicken cheese broth paprika 1 pkg. (12 oz.) quick-fxozen potato patties Stir instant cream and flour together thoroughly in a saucepan. Gradually stir in the chicken bx-oth with a whisk ox- a fork so mixtxire is smooth. Cook and stir constantly over modex-ate heat until boiling and thickened. Place fi’ozen potato patties in bottom of shallow cas- sex-ole; a deep heat-resistant glass pie plate is perfect to use- Arrange chicken over patties. Pour sauce over chicken. Sprinkle generously w4th grated cheese; spi-jukle with paprika. Bake in moderate (375 degrees) oven until top is browned and sauce is bubbly—about 25 min utes. Poke a fork under chicken and sauce and txy potatoes to make sure they are cooked. Makes 4 servings. The Battalion ....
