Nancy McCarty, this week’s guest editor, and her husband Bill,
a junior geological engineering student, live at C-15-Z College View.
Mrs. McCarty, formerly of Crockett, is president of the Geology
Wives, parliamentarian of Aggie Wives Council and president of
Aggie Wives Bowling League.
CRANBERRY BREAD
2 cups flour 2 T. melted shortening
% t. salt Vz cup orange juice
Vz t. soda 2 T. hot water
Wz t. baking powder Vz cup chopped walnuts
1 cup sugar 1 cup cut cranberries
1 egg grated rind of 1 orange
Sift dry ingredients, add beaten egg, shortening, orange juice and
hot water. Fold in nuts, cranberries and orange rind. Bake at 325
degrees for an hour and 10 minutes. Cool and place in refrigerator.
Delicious served with coffee.
SPAGHETTI
2 lb. ground meat 1 can tomato soup
2 large onions chopped 1 can each of water
5 T. bacon fat 3 buds chopped garlic
salt & pepper 1 can mushrooms (with water
2 T. chili powder they are packed in)
Fry ground meat and onions in bacon fat until white in color. Add
other ingredients and cook fox - 1 hour. Add cooked and drained spa
ghetti and cook until well mixed. Suggestion: serve with individual
fruit salad, celery, hot rolls and pralines.
LEMON-CARAWAY DRESSING
% t. salt X A cup lemon juice (fresh,
speck pepper frozen or canned)
% t. paprika % cup salad oil
Vk t. onion salt % t. caraway seeds
% t. sugar
In jar with tight-fitting cover, combine all ingredients. Shake
well, covered; refrigerate. Shake well before using. Suggestion:
serve with tossed-green salad and toasted butter crackers.

BARBECUE SAUCE-
4 T. minced onions 1 t. paprika
1 can tomato sauce 1 t. chili powder
% cup water V* t. pepper
3 T. vinegar ^ t. cinnamon
2 T. worchestershire sauce dash ground cloves
1 t. salt
Combine all ingredients in order listed.. Heat to boiling and use
on any pork.
HAMBURGER PIE
1 medium onion, chopped 1—10 V 2 or 11 oz. can
1 lb. hamburger condensed tomato soup
salt and pepper 5 medium potatoes, cooked
1 No. 2 can (214 cups) or !4 cup warm milk
14 lb. cooked green beans 1 beaten egg
Brown onion in hot fat; add meat and seasoning; brown. Add
drained beans and soup; pour into greased casserole. Mash potatoes;
Coordinator Appointed
T'or T.A.E.S. Research
Dr. Gerald W. Thomas has been
appointed coordinator of research
conducted by the Texas Agricul
tural Experiment Station, Dr. R.
D. Lewis, station director has an
nounced. Div Thomas will assume
his new duties June 1 with head
quarters in the South Plains area.
He will be especially concerned
with Texas Agricultural Experi
ment Station activities and rela
tionships west of a line running
roughly from Wichita Falls south
to Coleman, Menard and Sonora,
Lewis said.
“In a state as large as Texas,
with widely varying types of agri
culture and agricultural research,
it is essential that there be more
effective coordination within this
and with other agencies, and espe
cially with the people on the land
and in related industries,” Lewis
pointed out.
Some of the duties of the new
coordinator pointed out by Lewis
include determining from farmers
and ranchmen and public groups
the future problems and needs for
research in the area, developing
effective working relations and in
terchange of information with
other agricultural agencies and
public groups, cooperate with Tex
as A&M Agricultural Extension
Service district agents on research
and education problems.
A highly decorated World War
II Navy torpedo bomber pilot, Dr.
Thomas has been associated with
the A&M Range and Forestry- De
partment and the Experiment Sta
tion since 1951. Prior to that time
he had much experience in soil
and water conservation with the
U. S. Soil Conservation Service.
Dr. Thomas has conducted much
research in range grazing of live
stock, grass reseeding, and rain
fall as related to farming and
ranching. He is author of 14 pub
lications relating to agriculture in
West Texas. He and Mrs. Thomas
have three children and reside at
108 Poplar St., College Station.
