Elnora Simmang, raised in East Texas, was graduated from
Baylor University in 1937 with a degree in business administration.
Dr. Simmang, professor in Mechanical Engineering Department,
and his wife have lived in College Station for 19 years. Mrsu Sim
mang is a member of the College Women’s Social Club and sponsor
of the M.E. Wives Club. The Simmangs, who reside in North Oak-
wood, have a two-year-old son, Clifford L.

Bring water to a boil in a saucepan over direct heat; add salt.
Add corn meal gradually, stirring constantly. Continue cooking for

The Senior Ring Committee rules that
the preliminary grades for tiie Spring
Semester 1956 be considered as the final
grade in determining a student’s eligibility
to order the A. and M. ring. Such students
may now leave their names with the ring
clerk in the Registrar’s office. Their rec
ords will be checked and eligibility for the
ring will be determined by April 12th,
1956.
Orders for the ring will be taken between
April 12th and June 1st for July 10th.

Pan fry onion in shortening until tender. Add meat; cook until
browned. Add flour; blend well. Add tomatoes, chili powder, and salt
stirring constantly until thickened. Allow to simmer for about 15
minutes. Line a casserole or baking dish with Vt corn-meal mixture.
Pour in meat-and-tomato mixture. Carefully spread remaining corn-
meal mixture over the top. Bake in moderate oven (375 degrees)
until browned about 45 minutes. Serves 6 to 8. Very good served
with rice and beans, garlic French bread and tossed green salad.
CHICKEN WITH NOODLES
An easy-to-prepare, economical party dish, accompanied by gai’lic
French bread and a green salad or spiced peaches or apricots, cooked
green vegetables (Fordhook limas, green beans, and gi'een peas cooked
together), hot rolls and your most prized dessert.
4 or 5 lb. hen % or ^ cup chopped ripe olives
4 cups boiling chicken broth % cup dry sherry
10-oz. pkg. broad noodles Salt and pepper
1 cup grated cheese
Cook hen until tender, with desired seasoning and the intention
of arriving at 1 quart or more of rich stock; strip meat from chicken
bones in large pieces. Next, combine in saucepan chicken broth, noodles
and cook until tender but do not drain. Add chicken to above, then
blend in olives, sherry and salt and pepper. Turn mixture into shallow
greased casserole. Sprinkle top with grated cheese (sharp cheese if
you like it). Refrigerate if convenient to do so. Then to bake, slip
in moderate oven (350 degrees) until cheese melts and chicken-noodle
mixture is thoroughly heated. Makes 6-8 servings.
FRENCH DRESSING
% cup olive oil % cup catsup
V't cup sugar 1 clove of garlic
1 onion grated Salt and paprika
% cup vinegar
Mix dry ingredients first, use enough onion to moisten them. Mix
all ingredients well and keep in refrigerator. This makes about one
pint of dressing.
OAT3IEAL MACAROONS
1 cup shortening 1 t. soda
1 cup bi’own sugar % t. salt
1 cup granulated sugar % t. cinnamon
% t. vanilla 3 cups Quaker Ooats,
2 eggs, unbeaten uncooked
1% cup sifted enriched flour % cup chopped nuts
Place shortening, sugars, vanilla and eggs in mixing bowl and beat
very thoroughly. Sift flour with soda, salt and cinnamon; add to
shortening mixture and mix thoroughly. Fold in oats and nuts. Drop
by teaspoons onto greased baking sheet. Flatten if desired. Bake in
moderate oven (350 degrees) 12 to 15 minutes. Cool about 2 minutes
before taking up.
