Shepardson, former dean of the School of Agriculture, has been designa ted by the East Texas Cham ber of Commerce as its “Man of the Month” for July. The story of Shepardson’s ca reer, which resulted in his becom ing known to most Texans as “Mr. Agriculture,” is featured in the July issue of East Texas Maga zine, official publication of the re gional chambex'. When infox-med of Shepardson’s appointment to the Boai’d of Govei’- noi's for the Federal Reseiwe Sys tem, D. W. Williams, vice-chancel lor for agxiculture, said, “Having worked closely with Dean Charles Shepai’dson for some 27 yeai’s, I can say without resei’vation that he is a ‘top hand’ on any assignment he undeidakes.” Family Favorites By Mrs. Henry L. Phillips Elizabeth Phillips, an alumna of both Texas University and SMU, is the wife of Col. Henry L. Phillips, who was graduated from A&M in 1928 and is now connected with the Military Science De- partixient here. They have two children; Rosanna is now attending A&M Coxxsolidated High School and Henry Jr. will enter A&M as a freshman this fall. During the war Col. Phillips served with the 14th Air Force ixx China, which explains his authentic Chinese recipes. Williams added that Shepardson ha sa “rare combination of the aca demic and the practical, of the dis cipline requix-ed for fix-st-class per formance with the sympathy and knowledge of human shortcomings, of the give and take, of hard work and hard play. Mix meat well in soybean sauce and salt. Stir flour in water to make a thin paste, and dip each piece of meat in the paste. Drop in pan with frying oil and cook until brownish. Take sugar and vinegar and season to your taste with salt, pepper, and whatever other condiments you wish. Carrots, onions, pepper and parsley may be chopped or sliced fine and added to the sweet and sour solution. Remove oil from pan and add sweet and sour solution and vegeta bles to the cooked meat. When all ai’e thoroughly heated it is ready to serve. Makes enough for four. Cheese Roll 1 package Old English cheese 2 packages Velveeta cheese 1 wedge Roquefort (optional) Mix and season with % grated 2 packages cream cheese 1 package pimiento cheese 1 package Chateau 1 t. mixed dried herbs Let warm to room temperature. onion, grated bud garlic, celery salt, pepper and salt. Form roll with hands until all are thoroughly mixed and cover with paprika. Date Cake 2 cups chopped dates % lb. butter 2 cups chopped nuts 2 cups sugar 2 cups hot water 3 cups flour (sift before 2 t. soda measuring) Put hot water and soda over chopped dates and let stand while mixing butter and sug&r. Add this mixture to dates, flour and nuts, and bake in moderate oven about IVz hours. Ice with any brown sugar icing.
