CHICKEN ‘N’ DUMPLINGS Cut 4 to 6 pound chicken in pieces. Put in pressure saucepan. Add 2 teaspoons salt, 1 small onion, 2 or 3 celery ribs, a whole carrot, 2 or 3 whole cloves, a bay leaf, and a few sprigs of parsley. Add 2 cups water. Cover and let air exhaust. Cook at 10 pounds pressure for 30 minutes. Reduce pressure gradually. To cook without pressure, use % cup water per pound and simmer 2% to 3 hours. Mix dumplins by sifting 1 cup flour, % cup milk, 2 tablespoons melted shortening. Drop from tablespoon on chicken. Dumplings slide off easily if you dip spoon in stock each time. Cook uncovered for 5 minutes. Put on cover (without pressure indicator). Cook 5 minutes. Arrange chicken and dumplings on platter. For gravy, slowly stir in a paste of Vz cup water and 4 tablespoons flour for each 2 cups stock. Cook, stirring constantly, till mixture is bubbling all over. OKRA GUMBO Saute 1 chopped onion in 2 or 3 tablespoons bacon grease. Add 2 cups diced okra, 1—8 ounce can tomato sauce, fill tomato sauce can with water and add, season to taste. Let simmer until okra is done. OLD FASHIONED SQUASH Wash and cut up tender young yellow squash. Boil with salt and 1 tablespoon scraped onion until squash is tender and most of water is cooked out. Mash and put in hot skillet with 2 or 3 tablespoons bacon grease. Stirring constantly, cook until squash is dry and partly browned. Salt and pepper to taste. FRUITY GINGER-ALE SALAD 1—3 ounce package lemon jello 1 cup hot water 1—1314 ounce can pineapple tid-bits, drained Dash salt Cream shortening and sugar and add malted milk and cocoa. Add well beaten eggs.
