1 might mention that before I
married Fred three months ago
I had never cooked anything in
my life. To say the least, I start
ed from scratch, but I have found
cooking very enjoyable and such
an easy thing to do. I might add
that my husband has gained ten
pounds since we were married.
POT ROAST
My favorite meal when we have
company is a pot roast with all
the trimmings. It’s easy to fix
and makes a delicious meal.
2 1 /4 pound roast for four,
cook for 2Vz hours
Vz chopped, very thin,
medium onion
2 stalks celery chopped
very fine
4 medium size potatoes cut
in half
Vz can tomato sauce
Preheat your pot to 400 degrees,
season the roast with salt, pepper,
garlic, and Worchestershire sauce,
accent and savory salt. Rub all
this well into the roast. Flour
roast and put into preheated pot
with 3 tablespoons melted short
ening. Brown roast for five min
utes on each side. Add one-half
cup water and put in chopped cel
ery and onions. Turn heat down
to 200 degrees and let roast sim
mer. Add one-quarier cup flour
and cold water, mix well and add to
roast to make a gravy. Add one-
half can tomato sauce to gravy
and let everything cook together.
While my roast is simmering I
scrub and prepare the potatoes.
Boil them for about ten minutes
and drain, cut in half and put in
pot with meat about one hour be
fore meat is done. Baste potatoes
with meat.
With the roast I usually serve
canned peas, adding sliced mush
rooms, salt and peper. Let them
cook on a slow fire for ten min
utes then drain the water off and
add butter to melt.
I serve ice tea with this meal.

Thirty Door Prizes
Thiriy door prizes will be given
at the benefit card party of the
Mothers and Dads club of A&M
Consolidated school April 1 at 7:45
p.m. in the school gymnasium.
The prizes will be donated to the
benefit by parents of Consolidated
students who will also donate the
cake and coffee which will be serv
ed during the party.
The card party was planned by
the Mothers and Dads club in order
to raise funds not available
through taxes to aid in promoting
the physical plant and provide
equipment for the school. “We
hope all parents of Consolidated
children as well as friends and citi
zens of the community will join
us on April 1 in making this proj
ect a success so we may meet our
objectives this year,” Mrs. John
McCannon, general chairman, said.
Tickets for the benefit are 50
cents each and may be obtained by
calling Mrs. Raymond Hite or Mrs.
William Caudill, ticket chairmen.
Junior and senior high school
homerooms are also selling tickets
and the homeroom with the largest
ticket sales will receive a prize.
Mothers and dads in charge of
the benefit are Mrs. McCannon and
Mrs. Eugene Rush, co-chairmen;
Jack Kent, tables and chairs; Mrs.
W. W. Armistead and Dr. Luther
Jones, co-chairman of refresh
ments; Mrs. John Denison, door
prizes; and Mrs. Joe E. Davis, pub
licity.
Serve ready-prepared tomato
sauce — the meatless kind — over
slices of hot meat loaf. This treat
ment perks up an old standby.
Research Group
To Hold Course
The Texas Petroleum Research
committee will sponsor an oil re
covery conference April 4-5 in the
Memorial Student Center.
Registration, including a $3 fee
per person, will be held in the
MSC lobby from 5 to 8 p.m. April
4. Meetings, including a banquet
scheduled for Monday night, will
be held in the MSC ballroom. An
attendance of 350 is estimated by
the short course office.
