The following clipping from the El Paso County Farm Bureau News, regarding Extension activities in that county should prove especially inter- esting to our readers at this time, since Mrs. Maggie W. Barry is a Special Agent of the Extension Ser- vice: The tendency toward the raising of cash crops instead of providing area for gardens and live stock should be discouraged, is the opinion of Mrs. Maggies W. Barry, who helped conduct a recent Home Economics Conference in El Paso County. Only 15 per cent of the population of the United States will find it impossible to produce any food. The other 85 per cent can have home gardens, raise poultry and rabbits, or keep a cow, she said. Mrs. Barry spoke on the Texas Agricutural Program. for 1920, as recommended by a group of Texas farmers and County Agents at Waco in November. This program empha- sized the necessity for the increased production of food materials in order to reduce the cost of living and to provide for those European nations which are still suffering for food. Mrs. Barry deprecated the tendency toward raising so called money, crops | to the exclusion of the proguction of gardens and the care of small live stock. She insisted that both rural and city families should make every possible endeavor to have home gar: dens, poultry, Belgian hares, or a cow. A Marvelous Cooker. The mornings were devoted to the | study of subjects. relating to feeding | the family and to reducing the cost of living. Demonstrations were giv-| en by Mrs. Dora R. Mrs. | Barnes demonstrated the use of the | steam pressure cooker, using cookers. belonging to the Chamber of Com- | merce and Mrs. J. A. Rawlings. In one she prepared a full dinner con-| sisting of a roast and three vege-. tables. This was accomplished in 114 hours on a single gas burner. It was estimated that without the use| of the pressure cooker it would have taken 7 hours of cooking on a single | burner to have done an equal amount | of cooking. Those present agreed that a cooking utensil which would | save 5% hours of gas in a single meal would be a profitable addition | to the kitchen.
